Fennel Salad

Ingredients
  • 2 c. fennel stems and bulb, peeled & sliced thinly at bias
  • 2 Tbsp. Driftless sunflower oil or olive oil
  • 1 Tbsp. white wine vinegar
  • salt & pepper to taste
  • fennel leaves, for garnish

Instructions
  1. Remove leaves from stems & peel. Slice thinly at an angle.
  2. In a medium sized serving bowl, whisk together oil, vinegar, salt & pepper.
  3. Toss in sliced fennel & set aside for 20 minutes or so for flavors to meld.
  4. Garnish with fennel leaves.
  5. Serve cold or at room temperature.

 

Kohlrabi Coleslaw with Paprika Dressing

Kohlrabi Coleslaw with Paprika Dressing

Ingredients
  • 3 tablespoons white wine vinegar
  • 1 tablespoon sweet Hungarian paprika
  • ½ cup Driftless Sunflower oil or olive oil
  • 2 teaspoons purchased cream-style white horseradish
  • ½ teaspoon sugar
  • 2 large kohlrabi bulbs, trimmed, peeled, cut into large pieces
  • 1 bunch of radishes.

Instructions
  1. Combine vinegar and paprika in bowl.
  2. Whisk in oil.
  3. Mix in horseradish and sugar.
  4. Season with salt and pepper.
  5. With a cheese grater, grate kohlrabi and radish.
  6. Transfer vegetables to bowl.
  7. Thinly slice enough kohlrabi leaves to make 1 cup; add to bowl.
  8. Toss with dressing.
  9. Let stand at least 30 minutes before serving.

Refrigerator Pickles (bread & butter type)

The minerals in the sea salt might make the pickles slightly cloudy but will not impair them anyway
Ingredients
  • 7-8 pickling cukes, thinly sliced (NOT peeled)
  • 1 medium onion, thinly sliced
  • 1⅓ c. cider or white vinegar
  • 1⅔ c. sugar
  • 3 Tbsp. pickling or non-iodized sea salt
  • ½ tsp. celery seed
  • ½ tsp. mustard seed
  • ¼ tsp. tumeric

Instructions
  1. Mix sliced cukes & onions in a large bowl.
  2. Dissolve sugar in vinegar & mix in salt, celery & mustard seeds, & tumeric.
  3. Pour over cukes/onions, stir gently, & pour into clean jars (make sure liquid covers vegetables).
  4. Store in refrigerator, keeps for many many months.
