Radish Pineapple Salsa
Recipe type: Sauce

  • 1 bunch radishes, stems & tails removed
  • ⅔ cup pineapple. finely chopped (fresh or canned)
  • ¼ cup onion or green onions, minced
  • ¼ cup cilantro, chopped
  • 1 to 3 Tbsp. hot sauce
  • zest & juice from 1 lime
  • 1 tsp. salt

  1. At least an hour (or up to 4 hours) before serving, thinly slice radishes.
  2. Place in small bowl, toss with salt, and press (place a small plate that just fits inside bowl on top of radishes and set a quart jar of water on top of plate).
  3. Meanwhile, combine remaining ingredients in medium serving bowl.
  4. Refrigerate if you wish.
  5. After at least an hour, drain & rinse radishes & stir into pineapple mix.
  6. Adjust seasonings to taste.
  7. Serve with Caribbean food.


Southern Collard Greens

Southern Collard Greens
Recipe type: Side Dish

  • 1 bunch collard greens, stems removed & chopped coarsely
  • ½ c. water
  • 2 slices bacon, cooked, drained, & chopped*
  • ¼ c. onion, chopped
  • salt to taste
  • hot sauce to taste

  1. In a medium sauce pan, bring water, bacon, onion, salt, & hot sauce to boil.
  2. Add chopped greens, stir until wilted.
  3. Reduce heat, cover, & simmer for 15-30 minutes, depending on your taste.
  4. Serve with corn bread, fresh tomatoes, black-eyed peas & rice,barbecued ribs
  5. * Vegetarians can substitute some oil & liquid smoke instead of bacon.


Greens with Ginger

Greens with Ginger
Cuisine: Indian

This dish can be served over rice or as a side to other Indian dishes, especially mild curries
  • 3 Tbsp. Driftless Sunflower oil or safflower oil
  • 1 inch piece fresh ginger, peeled, sliced thinly, then chopped
  • 2 cloves garlic, minced
  • 2 fresh hot green chili peppers, chopped OR 1 Tbsp. crushed hot red pepper flakes
  • ½ tsp. garam masala (Indian spice mixture available at any food co-op)
  • ¼ tsp. sugar
  • ⅛ tsp. cayenne pepper
  • 1 bunch lacinato kale, stem removed & chopped coarsely

  1. Put oil in a wok or large sauce pan over high heat.
  2. Add ginger & stir until ginger starts to brown.
  3. Add garlic, kale, & chilis or pepper flakes.
  4. Stir, cover, & cook until kale is tender, about 5 minutes.
  5. Add salt, garam masala, sugar, & cayenne & cook for a couple of minutes.


Spicy Sweet Potato Fries

Spicy Sweet Potato Fries

  • 2 large sweet potatoes, cut into 2-inch wedges
  • 1 tablespoon Driftless Sunflower or olive oil
  • ½ teaspoon cayenne pepper
  • teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic salt
  • Preheat oven to 400 degrees.

  1. Place potato wedges in a bowl and add oil; toss to coat. In a small bowl, combine remaining ingredients.
  2. Sprinkle spice mixture over potatoes and toss to coat.
  3. Place on a baking sheet and bake for 30 minutes or until potatoes are soft on the inside and slightly crispy on the outside.
  4. For added kick on the side by adding one of your kung paos to some ketchup.
