Sesame Veggie Salad

This Sesame Veggie Salad comes together quickly to make a satisfying side in minutes!

Sesame Veggie Salad
 

Ingredients
  • 1 head broccoli, roughly chopped
  • 3 carrots, roughly chopped
  • 1 fennel, quartered and bottom removed
  • 3 tablespoons toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon Tamari
  • 1 teaspoon maple syrup
  • 1 tablespoon toasted sesame seeds, plus extra for garnish

Instructions
  1. Run the veggies through a food processor using a chopping blade, or slice thinly with a sharp knife. Place in a large bowl.
  2. Stir together the rest of the ingredients.
  3. Mix salad and dressing together, taste and adjust seasoning if necessary.
  4. Let sit for at least 15 minutes. Garnish with extra sesame seeds and serve.

 

Grilled Veggies Over Salad

Grilled Veggies Over Salad is always a delicious way to turn your salad into a meal! Use the veggies suggested in the recipe below or try this recipe with other veggies like sweet potatoes, carrots, onions – you get the idea!

Grilled Veggies Over Salad
 

Ingredients
  • Half of your beet bunch, roughly chopped
  • 3 or 4 salad turnips, quartered
  • Your garlic scape bunch, chopped into quartered
  • 1-2 zucchini or yellow summer squash
  • 1 teaspoon extra virgin olive oil
  • Your salad mix
  • For the dressing:
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 teaspoons balsamic vinegar
  • ½ teaspoon dijon mustard
  • ½ green garlic, finely minced
  • A pinch of salt
  • ¼ cup extra virgin olive oil

Instructions
  1. Place the beets, scapes, zucchini and turnips on a sheet of aluminum foil and drizzle with oil and toss to coat, sprinkling with salt & pepper. Grill on the foil for 10 – 15 minutes or until veggies are tender, flipping as needed.
  2. When the veggies are cooked, set aside to cool.
  3. Whisk all of the salad dressing ingredients in a bowl.
  4. Combine the salad mix, grilled veggies and as much dressing as you like in a large bowl and mix well. Enjoy!

 

Driftless Sunflower Oil Vinaigrette with Chives

This Driftless Sunflower Oil Vinaigrette with Chives (or garlic chives!) is a great springtime dressing for your favorite salad greens.

Ingredients
  • 1 teaspoon dijon mustard
  • 2 teaspoons pure maple syrup or honey
  • 3 tablespoons apple cider vinegar or white wine vinegar
  • ½ bunch garlic chives, minced
  • 4 oz sunflower oil
  • salt & pepper to taste

Instructions
  1. Combine mustard, vinegar and maple syrup/ honey in a small bowl or half pint jar. Mix with a fork.
  2. Slowly add sunflower oil while whisking with your fork until emulsified.
  3. Add garlic chives and mix again.
  4. Add salt & pepper to taste and pour on your favorite salad!

This is an experiment type of thing, so there will be no amounts. Let yourself fly free and be prepared to accept the consequences.
Instructions
  1. Take a jar, chop some sort of garlic (green, scape, clove) scallion or onion.
  2. Put in jar. Add a bit of salt and pepper.
  3. Are there any fresh herbs available? Dill? Basil? Parlsey? Great! Chop ‘em up and, throw ‘em in the jar.
  4. Add a good glug or two of sunflower oil – or olive oil.
  5. Add a nice amount of some tasty vinegar like white wine, balsamic or red wine.
  6. The Clincher – got any maple syrup? J
  7. ust a bit would REALLY do the trick. If not, just a tablespoon of sugar will do.
  8. Put the lid on the jar and shake! shake! shake!
  9. Taste and adjust! Fun Fun Fun!
  10. Play with it, you won’t buy salad dressing for the rest of the summer!
