Parsnips in a Dark Beer Glaze

Ingredients
  • 1 pound parsnips (about the amount in your box), cut into small chunks
  • 1 cup stout or brown ale
  • ¼ tsp. cinnamon
  • ⅛ tsp. cloves
  • 2 tsp. butter
  • salt & pepper
  • 1-2 Tbsp. maple syrup (optional)

Instructions
  1. Combine parsnips, beer, & spices in heavy saucepan.
  2. Cover & simmer until barely tender, 8-10 minutes.
  3. Remove cover & simmer hard until liquid reduces to a glaze.
  4. Stir in butter. Season to taste with salt & pepper.
  5. Stir in optional maple syrup.

 

Maple Orange Mustard Golden Beet Salad

Maple Orange Mustard Golden Beet Salad

Ingredients
  • 1 lb. golden beets (about what’s in your box)
  • 1 Tbsp. sunflower oil
  • 1 clove garlic, minced
  • 3 Tbsp. orange juice
  • 1 Tbsp. maple syrup
  • 1 tsp. grainy mustard
  • salt & pepper to taste

Instructions
  1. Roast beets whole with skins at 350 degrees for 40-50 minutes.
  2. Meanwhile, saute garlic in oil in small sauce pan until fragrant & golden.
  3. Whisk in remaining ingredients & bring to a boil. Cool.
  4. When beets are done (can be easily pierced with a fork), cool them & then slip off skins, slice, & toss with marinade.
