Organic Tomato & Olive Bruschetta

Our Organic Tomato & Olive Bruschetta is an amazing way to experience our delectable tomatoes!

Tomato & Olive Bruschetta

Serves: 6-8
 

Ingredients
  • 1 loaf french bread, cut into thin ¼ inch slices
  • sunflower or olive oil for drizzling
  • 2 cups tomatoes, seeded & diced small (a mix of slicers/romas & sungolds are nice)
  • ¼ c. onions or shallots, minced
  • ¼ c. green, kalamata, or oil-cured black olives, coarsely chopped
  • 1-2 cloves garlic, minced
  • 3 Tbsp. fresh basil or parsley, chopped
  • 1 Tbsp. olive or sunflower oil
  • salt & pepper to taste
  • cream cheese or goat cheese (optional)

Instructions
  1. Preheat oven to 400 degrees.
  2. Line cut bread on a sheet pan in a single layer to make crostini.
  3. Drizzle or brush with oil.
  4. Bake until just starting to toast, about 10 minutes (check frequently as the type of bread, pan, & oven will all vary baking times). Let cool.
  5. Meanwhile, mix tomatoes, onions, olives, garlic, basil/parsley, oil, salt, & pepper in a bowl.
  6. Spread each crostini with a bit of cheese, if desired, top with tomato mixture, & serve immediately.

Heirloom Tomato & Fresh Mozzarella Salad

Ingredients
  • 1 lb. heirloom tomatoes (mixed colors are pretty), sliced thickly
  • ½ lb. fresh mozzarella (the kind in a salty brine), sliced/torn into bite sized pieces
  • ¼ c. sweet onions, sliced into thin wedges
  • 3 Tbsp. Driftless Sunflower Oil or olive oil
  • 1 Tbsp. balsamic vinegar
  • 2 Tbsp. fresh basil,
  • stacked, rolled, & thinly sliced
  • salt & pepper to taste

Instructions
  1. Mix all ingredients & allow to stand at room temperature for about a ½ hour before serving.
  2. Best served at room temperature to preserve proper texture of tomatoes.

Seasoned Kale Chips

Seasoned Kale Chips

Ingredients
  • 1 bunch of curly kale, stems removed, leaves cut into bite sized pieces
  • 2 Tbsp. olive or Driftless Sunflower Oil
  • 1 Tbsp. apple cider or white wine vinegar
  • 1 tsp. salt
  • Pinch of black pepper, paprika (sweet, smoked, or hot), or cayenne/chipotle powder

Instructions
  1. Preheat oven to 300 degrees. In a large bowl, whisk together oil, vinegar, & seasonings & carefully fold in kale pieces to coat.
  2. Let sit for 10 minutes or so as oven preheats.
  3. Spread seasoned kale out on a cookie sheet, making sure none of the pieces overlap, & bake for about 10 minutes.
  4. Flip pieces over & bake another -10 minutes, until edges start to brown.
  5. Let cool on pan & store in an airtight container.
  6. You can also place seasoned leaves in a dehydrator until crisp.
