Ingredients
  • ½ cup slivered almonds,toasted
  • 3 tablespoons sesame or peanut oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce OR
  • Asian fish sauce
  • 1 teaspoon sugar
  • Freshly ground pepper
  • 1 pound Napa cabbage (1 small or ½ large head), thinly sliced or shredded
  • 2 carrots, grated
  • ½ medium onion, sliced into very thin wedges
  • ¼ cup chopped mint

Instructions
  1. In a bowl, mix the oil, vinegar, soy/fish sauce, sugar, & mint.
  2. Add the cabbage, carrots, onions & toss.
  3. Garnish with almonds & mint & serve.

 

Red Pepper & Mint Sauce

Ingredients
  • 1 medium red sweet pepper (or Italian frying pepper or 2 pimiento peppers)
  • ½ hot red pepper (cayenne or jalapeno), or a pinch of cayenne powder
  • 2 Tbsp fresh lemon juice
  • 1 tsp. fresh lemon zest
  • 3 Tbsp. roasted or raw toasted almonds, coarsely chopped
  • ⅓ cup loosely packed mint leaves
  • salt & pepper to taste

Instructions
  1. Combine all ingredients but mint in a blender or food processor.
  2. Pulse until almost smooth.
  3. Add mint leaves & pulse a few more times, until mint is chopped.
  4. Serve with grilled or roasted chicken, lamb, fish, or vegetables.

 

Wild Apple Almond Torte

Ingredients
  • Crust:
  • ½ c. salted butter, softened 1 tsp. vanilla extract
  • ⅓ c. sugar 1 c. all-purpose unbleached flour
  • Filling:
  • 8 oz. neufchatel/cream cheese, softened
  • 1 egg
  • ½ tsp. almond or vanilla extract
  • ¼ c. sugar
  • Topping:
  • 4 medium sized apples, cored & sliced very thin
  • ⅓ c. sugar
  • ½ tsp. cinnamon
  • ⅓ c. sliced or slivered almonds

Instructions
  1. Grease a 9” springform pan.
  2. Preheat oven to 400 degrees.
  3. Crust:
  4. Process butter, sugar, & vanilla in a food processor.
  5. Add flour & pulse a few times.
  6. Press into greased pan, forming a 1” lip on the sides.
  7. Bake for 5 minutes. Remove & cool while you prepare the remaining ingredients.
  8. Filling:
  9. Combine sliced apples, sugar, & cinnamon in a bowl, toss to coat, & set aside. Process filling to a smooth consistency.
  10. Pour filling into crust & carefully spread apple slices overlapping in a spiral design. Reserve any remaining liquid in bottom of bowl.
  11. Sprinkle almonds over the top. Bake for 10 minutes, pour reserved liquid over the top Reduce heat to 350 degrees and bake for another 15-20 minutes
  12. Torte is done when apples are softened & filling is firm.
  13. Cool before serving.

 

Green Beans, Cilantro & Almond Salad

Green Beans, Cilantro & Almond Salad

Ingredients
  • ¼ cup whole almonds (about 1-1/2 ounces)
  • 4 teaspoons tamari
  • Your bag of green beans, trimmed, cut into 1-inch pieces
  • 2 tablespoons rice vinegar
  • 1 tablespoon Driftless Sunflower Oil
  • 1 large garlic clove, pressed
  • 1 teaspoon minced peeled fresh ginger
  • 2 tablespoons thinly sliced yellow onion
  • ⅓ cup fresh cilantro leaves

Instructions
  1. Place almonds in small nonstick skillet.
  2. Stir over medium heat until almonds are lightly toasted, about 5 minutes.
  3. Increase heat medium-high.
  4. Add 3 teaspoons tamari and stir until tamari evaporates and coats almonds, about 1 minute.
  5. Transfer to plate and cool. Chop almonds. Cook beans in large pot of boiling salted water until just tender, about 5 minutes. Drain.
  6. Rinse beans under cold water. Drain well. Cover almonds and store at room temperature.
  7. Cover and refrigerate beans; bring to room temperature before continuing.
  8. Whisk vinegar, oil, garlic, ginger and remaining 1 teaspoon soy sauce in large bowl to blend.
  9. Add beans and toss to coat. Sprinkle green onions, cilantro and almonds over salad and serve.
