A fresh take on pizza – sooooooooo yummy!
Ingredients
  • 1 Pizza Dough (homemade or bought)
  • 1 Tbsp. Olive Oil
  • Optional Toppings:
  • Sweet Pepper (optional), thinly sliced OR Roaster Pepper – roast before using as a topping
  • Basil (optional)
  • Tomato (optional), thinly sliced
  • Zucchini (optional), thinly sliced
  • Salad Mix/Spinach
  • Mozzarella, Feta and Parmesan Cheese
  • Salad Dressing – pick an option: Lemon Apple Cider Vinegar dressing, White wine vinegar dressing or Balsamic Vinegar Dressing.

Instructions
  1. Spread a pizza dough into a 14” round on parchment.
  2. Drizzle olive oil over crust, lay out toppings.
  3. Add mozzarella cheese and bake in a 425 degree oven on a pizza stone for about 12 minutes.
  4. Mix any and all greens you have in a bowl.
  5. Top with feta and dressing.
  6. Mix to coat salad.
  7. Dump the salad on the hot pizza and cut as desired.
  8. Top with fresh Parmesan.

Organic Wilted Asian Greens with Ginger

Ingredients
  • 4 cups mixed cooking greens, coarsely chopped (in this box, asian greens mix,
  • turnip greens, radish greens, kohlrabi greens spinach)
  • 1 Tbsp. Driftless sunflower oil
  • 3 Tbsp. minced green garlic (white part & stem)
  • 2 Tbsp. minced ginger
  • 1 Tbsp. rice vinegar or mirin or rice cooking wine
  • 1 – 2 Tbsp. tamari or soy sauce or Asian fish sauce
  • black pepper to taste
  • 2 Tbsp. toasted sesame seeds

Instructions
  1. Rinse greens in colander & let sit wet. Heat oil over medium-high heat in a saute pan with lid.
  2. Add green garlic & ginger, stir a few times, & add wet greens.
  3. Stir a couple times to coat greens with oil (you may have to add the greens in a couple batches if your pan is small) & cover for about 1 minute.
  4. Remove lid, add liquids & pepper, stir a few more times, remove from heat.
  5. Adjust seasoning to taste, sprinkle w/ sesame seeds & serve immediately.
  6. Top with the dressing, toss again and serve right away.

Ingredients
  • Your bag of arugula
  • ¼ cup pine nuts (or walnuts)
  • ⅓ cup Parmesan cheese
  • ½ tsp. salt
  • 1 lg. clove garlic, chopped
  • 2½ tbsp. Driftless sunflower oil or olive oil
  • ¼ cup hot water

Instructions
  1. In a food processor pulse together all ingredients except oil and water until arugula is chopped fine.
  2. With motor running add oil in a stream, blending mixture until smooth.
  3. Sauce may be made up to this point 1 week ahead and chilled, its surface covered with plastic wrap.
  4. Bring sauce to room temperature to continue.
  5. Stir in ¼ cup hot water plus additional for thinner consistency if desired

Ingredients
  • Strawberry & Arugula Salad with Fresh Mint
  • 1 pint strawberries, sliced
  • 4 cups arugula or mixed greens
  • ¼ c. potato onions, thinly sliced
  • 3-4 Tbsp. rosemary vinaigrette (or any vinaigrette)
  • ¼ c. fresh mint, cut into a chiffonade
  • ¼ c. toasted, chopped hazelnuts or almonds

Instructions
  1. Toss strawberries, arugula, onions, & vinaigrette in a serving bowl.
  2. Top with mint & nuts & serve immediately.

Fish Tacos with Arugula

Ingredients
  • 1 lb. white flaky fish like cod, mahi mahi, or walleye or tilapia, cut into long strips
  • Corn tortillas
  • 2 carrots, grated
  • 2 c. arugula, washed, dried, & shredded
  • ½ sweet onion, thinly sliced
  • lime wedges for garnish
  • Sauce:
  • ⅔ c. plain yogurt or sour cream
  • 3 Tbsp. mayonnaise
  • 1 lime, juiced
  • 1 jalapeno pepper, minced OR 1 Tbsp. hot sauce
  • ½ tsp. ground cumin
  • ½ tsp. ground coriander
  • ¼ tsp. chipotle powder (optional)
  • 3 Tbsp. cilantro, chopped (optional)

Instructions
  1. Squeeze lime juice & salt over fish.
  2. Whisk sauce ingredients together & set aside.
  3. Either grill or bread & deep fry.
  4. Mix 1 c. flour, 2 Tbsp. cornstarch, 1 tsp. baking powder, ½ tsp. salt & quickly mix in an egg beaten with some light beer.
  5. Roll each piece of fish in flour then dip in breading & slide into a couple of inches of 375 degree oil until golden brown.
  6. Drain on paper towel.
  7. Warm each tortilla on a hot pan & serve topped with fish, veggies, sauce, & lime wedges.
