BEAUTY HEART & BLACK SPANISH RADISH
RECIPES


Vietnamese Root Vegetable Slaw
4 1/2 cups grated mixed root vegetables of choice (such as black spanish radish, carrots, beets, turnips, etc.)
1/2 cup red onions, diced
1 small hot or sweet pepper, seeded & minced
1/4 c. fresh cilantro, chopped (optional)
4 Tbsp. rice vinegar
1 Tbsp. soy sauce
1 Tbsp. sugar
salt & black pepper to taste
pinch of cayenne (optional)
Place grated vegetables, onions, peppers, & cilantro in a serving bowl. Whisk together remaining ingredients & pour over the vegetable. Toss thoroughly & add more salt/ pepper/vinegar to taste. Serve immediately.

Storage Root CruditÈ
3 medium carrots
1 beauty heart radish
1/2 black spanish radish
1 small gold turnip (or half a larger one)
1 medium red beet
So this is your basic veggie & dip platter, only with local seasonal veggies in December! You’ll be surprised at the sweetness and beauty of these veggies on a platter. Some tips: If the skins are getting brown or tough, peel them. If not, no need, just scrub them well. Get a big, super sharp chef knife & take the time to cut everything properly - uniform thickness & shapes for each vegetable. Arrange them neatly & prettily on a large platter, alternating colors. Stick a bowl of your favorite dip in the middle & snack away! Serves 6-8.

Good Stuff to Know:
The Black Spanish and Beauty Heart radishes are both very beautiful winter-type radishes (growing over a long season & harvested in the Fall, potentially for storage into the winter versus the quick growing “spring” bunching radishes we’re more used to) that can be quite bity.

Storage Tips
I would suggest putting it plastic & stashing it in the back of your fridge, to be unearthed with pleasant surprise sometime in December or later, as it’s spicy radish flavor mellows with age.
